Getting Children to Enjoy Soy

Soy foods are nutritious because they are high in protein, omega- 3 fatty acids, fiber and health promoting isoflavones. They are a natural inclusion in a well-rounded diet for both adults and children. A simple way to "sneak" some soy into your children's diet is to make a ranch salad dressing using silken tofu instead of buttermilk. Ranch dressing is popular with kids, simple to prepare, and can be used on salads or as a dip for crudite. A great afternoon snack is a platter of cut up fresh fruits and vegetables served with a bowl of the ranch salad dressing made from our recipe below.

Many people are concerned about the flavor of soy. But silken tofu is virtually tasteless. When added to recipes, it acts like a sponge, taking on the flavor of the foods with which it is prepared. However, we have found that the flavors need to be bold and strong. Lemon, chocolate, pumpkin, goat cheese, Asian spices and Mediterranean marinades work best. Don't try to substitute silken tofu in all recipes that call for milk, cream, mayonnaise or eggs. Start slow and substitute in small quantities (1/4 or 1/2 the amount). Before long you will have adapted favorite recipes and discovered new ones.

RANCH SALAD DRESSING

This child–friendly recipe can be used as a salad dressing or as a dip
with carrot and celery sticks.

Yields 2 cups

1 cup milk
12 ounces silken tofu, rinsed and drained
1 (1 ounce package) ranch salad dressing mix packet

  1. Put the milk, silken tofu, and dressing mix into a blender container. Blend until smooth and creamy, scraping down sides if necessary.
  2. Put dressing in a container, cover and refrigerate 30 minutes to thicken. Store in the refrigerator for up to 2 weeks.
