Snacking for Health
EDAMAME ARE GREEN SOYBEANS. YOU CAN USUALLY FIND THEM fresh, sold in their pods at Asian markets. Otherwise, most supermarkets carry them in the frozen vegetable section or with frozen prepackaged Asian foods. They are available in the pod or podless. Edamame are sweet, pleasant tasting, and when served warm sprinkled with coarse sea salt, they are an excellent healthy snack. Each 1½ cup (2.5 ounces) frozen serving of soybeans in the pods provides at least 8 grams of soy protein and 21 grams of natural isoflavones. In addition, they contain measurable amounts of vitamin C, iron, calcium, and dietary fiber. And for the low carb dieter, soybeans contain only 7 grams of “good” carbohydrates.
This good-for-you fun food is not for adults only. Serve them up as after school snacks of "Magic Beans" and watch them disappear. Try them instead of chips.
